Wanting to keep everything local, Hughes has tried more than 100 combinations by turning his kitchen into a laboratory environment with organic ingredients such as shellfish shells and seaweed. In an interview with Hughes; “I learned everything by trial and error on the way I started, but my failures never discouraged me, I think this is the biggest factor in my success,” he says.
